A big part of Bare Naked Noodles is our fresh, and unique flavors. Over here, we are a creative bunch that loves to share our favorite pairings. Whether it is a fun Pinot Noir flavored noodle or we stick with our Plain Malfaldine, you can expect us to have a little fun with our recipes. On Wednesday, November 16th, our owner, Linda Croley, will be cooking a personal favorite on WBRC Fox 6 at 8:30am with Janice Rogers. Watch her prepare one of her personal favorites, Carmelized Sweet Potato Orzo and then take a crack at it yourself. Check out the recipe below.

Caramelized Sweet Potato Orzo

  • 1 tablespoon butter
  • 1 shallot, chopped
  • 1 cup sweet potato orzo
  • 2 cups broth, chicken or vegetable
  • 2 sweet potatoes diced into small pieces
  • 1/3 cup pecorino
  • Salt, pepper, dried sage, fresh for garnish
  • Olive oil

Start with melting butter and some chopped shallots in a medium sauté pan. Cook on medium for 1-2 minutes until translucent. Then add orzo, stir until it begins to toast, which should take about 2 minutes. Afterward, add a pinch of salt and pepper and dried sage along with your broth. Stir, bring everything to a boil then reduce heat to low, cover and let cook for 20 minutes.

Meanwhile, be sure to toss your chopped fresh sweet potato with 1 tablespoon of olive oil and salt and pepper. Roast on 375 for 15 minutes. Top orzo with sweet potatoes and grated pecorino. Then we love to add a garnish to the serving dish with fresh sage since you can never go wrong with a pop of color.

For a look at the finished product be sure to tune in at WBRC Fox 6 at 8:30am. Linda will be showing you exactly how to prep this fan favorite.
