Pasta Luce Primavera
Broccoli – 1 cup steamed or frozen
Red peppers- 1/2 cup in slices
Orange peppers – 1/2 cup in slices
Shrooms – favorite sliced
Onions – 1/2 cup diced
Bare Naked Noodles Pasta Luce – 1/2 lb cooked
Chicken stock – 1 cup
Splash of cream – 1/4 cup
Chicken breast- 1/2 lb cubed
Parmesan cheese – 1/3 cup
Pat of butter – 1 Tbsp
Sauté the onions, peppers, and mushrooms in olive oil in a skillet. Add broccoli to warm. Clear pan and set aside vegetables. Wipe skillet clean and add chicken cubes, olive oil and sauté until cooked. Add back the veggies, then add broth and cooked pasta and cream. Let everything reduce and then add parmesan cheese. Serve with cracked pepper.
